Spicy Italian Sausages
Mushrooms, Onion and Black Beans – These are absolutely brilliant – masses of flavour and perfect texture.

- Sausage Mix
Instructions
- Place the spice mix ingredients in a small bowl and mix to combine, set aside.
- If using flax meal, mix the meal and water and set aside to thicken OR beat the egg.

- Meanwhile, mash the beans until they are broken up and about three quarters have been reduced to paste.
- Add the tomatoes, basil, yeast, rice flour and spice mix and stir well.
- Add the flax mixture OR beaten egg, the onion mixture, the Worcestershire sauce and the remaining 1 tsp of oil and mix until combined.

- Form each portion into a log – the mixture will be very sticky, so use a spatula. Bring the bottom of the sheet over each log and then roll towards the top of the sheet. Twist the ends of each roll to seal.
- Place the foil logs into a steamer and steam, covered, for 20 minutes.

1 "flax egg" - combine 3 tsp ground flaxseed and 2 TBS warm water
