Bill Granger is often credited with inventing Avocado on Toast, but there is a good argument that it most likely first arose in Mexico.

Instructions
- Roughly chop the avocado and place in a bowl with the dill, mint, salt, pepper and juice.
- Lightly mash with a fork and fold in ⅔ of the cheese.
- Pile on to hot toast and scatter with remaining feta and extra dill or mint.
