Seitan Chicken

Seitan ChickenĀ  A Seitan that is suited to any recipe that calls for chicken

Ingredients
    Wet Ingredients
  • 200 g Extra-firm Tofu - well pressed and cubed
  • 1 400g tin young Jackfruit - drained
  • 150 ml Vegetable Stock
  • 3 tsp White Miso paste
  • 3 cloves Garlic - minced
  • 3 tsp low-flavour Vegetable Oil (e.g. canola or peanut)
  • Dry Ingredients
  • 0.5 tsp dried Rosemary
  • 150 g Vital Wheat Gluten
  • 1.5 tbsp Nutritional Yeast
  • 1.5 tbsp dried Onion flakes (OR 2 tsp Onion Powder)
  • 0.25 tsp ground White Pepper
Instructions
  1. Blitz the wet ingredients together in a blender until smooth and creamy.
  2. Transfer to the bowl of a stand mixer fitted with dough hooks.
  3. With the mixer running on a slow speed, gradually add the dry ingredients.
  4. Knead for 10 to 15 minutes.
  5. Remove from the bowl and set aside to rest for 5 minutes.
  6. Divide into 6 pieces of the desired shape and wrap, tightly, in thick aluminium foil, making sure that the parcels are well-sealed.
  7. Steam for 45 minutes.
