Roast Tomato Salad

Roasted Tomato Salad  I LOVE roast tomatoes - they are SWEET and SQUISHY - I've also seen this served with Feta and Olives

Ingredients
  • 250 g Medley Tomatoes
  • 1 medium Brown Onion - cut into 1/8 moons
  • 4 cloves Garlic - not peeled
  • 2 tsp Olive oil
  • 0.25 cup semi-dried Tomatoes - roughly chopped
  • 250 g Cherry Tomatoes
  • 0.25 cup Basil leaves - torn
Instructions
  1. Heat oven to 180°C (160°C fan-forced).
  2. Place the medley tomatoes, onion and garlic cloves in a baking tray with the olive oil, season with salt and pepper, and toss to coat. Roast until the tomatoes begin to burst – 15 to 20 minutes.
  3. Place the roasted, sun-dried and cherry tomatoes on a serving plate, season with salt and pepper, scatter with basil leaves and serve.
