Carrots - julienned - I use a mandolin
(OR cut into thick sticks

clove Garlic - crushed

ground Cinnamon

Cayenne pepper

chopped Coriander leaves

Instructions
Steam the carrots until just tender. Alternatively, cover and microwave for 2 minutes.
Heat the oil over a moderate heat and cook the garlic until lightly coloured.
Add the spices and heat, stirring, until they become fragrant – about 1 minute.
Add the carrots and stir thoroughly to coat in the spice-oil mixture.
Remove from the heat allow to cool to room temperature – dress with the coriander leaves, oil and vinegar just before serving.
