Moroccan Spiced Carrots

Moroccan Spiced Carrots - A simple accompaniment to any Moroccan tagine

Ingredients
  • 250 g Carrots - julienned - I use a mandolin (OR cut into thick sticks)
  • 1 clove Garlic - crushed
  • 1 tbsp Olive oil
  • 0.25 tsp Sweet paprika
  • 0.25 tsp ground Cumin seed
  • 0.25 tsp ground Cinnamon
  • 0.125 tsp Cayenne pepper (OR chilli powder)
  • 0.25 cup chopped Coriander leaves
  • 1 tsp white Vinegar
  • 2 tsp Olive oil
Instructions
  1. Steam the carrots until just tender. Alternatively, cover and microwave for 2 minutes.
  2. Heat the oil over a moderate heat and cook the garlic until lightly coloured.
  3. Add the spices and heat, stirring, until they become fragrant – about 1 minute.
  4. Add the carrots and stir thoroughly to coat in the spice-oil mixture.
  5. Remove from the heat allow to cool to room temperature – dress with the coriander leaves, oil and vinegar just before serving.
