Lemon Mustard Tofu
This simple baked tofu is quick and easy but very tasty

Instructions
- Slice the tofu into 1cm thick strips.
- Whisk together all ingredients except the tofu.

- Marinate for at least 1 hour and up to overnight in the ‘fridge (the longer the better).
- Heat oven to 180°C (160°C fan-forced).
- Transfer tofu and marinade to baking dish and bake for 20-25 minutes, turning halfway through.
- Serve with roast potatoes.
