A quick and easy roast tofu recipe with a zesty Lebanese-inspired marinade

- Whisk the lemon juice, stock, oil, garlic, thyme, paprika, cumin and cayenne pepper in small bowl.

- Cover and refrigerate for at least 6 hours or overnight, turning occasionally.
- Preheat oven to 220°C (200℃ fan-forced).
- Transfer the tofu and marinade to a large roasting pan and season with salt and pepper.

- Transfer to plates and garnish with lemon. Pass the pan juices separately. Serve with roast potatoes.
