Lebanese Roast Potatoes –
Soft roast potatoes with an oily lemony finish.

Instructions
- Preheat the oven to 220˚C (200˚C fan-forced).
- Toss the potatoes, in a large bowl, with the olive oil and salt.
- Transfer to an oven tray and roast for 40 minutes, turning once, until golden.
- Heat the olive oil in a large frying pan over a medium-high heat, add the garlic and coriander and cook for 1–2 minutes until the garlic starts to change colour.
- Add the lemon juice and the hot potatoes to the pan and toss lightly to coat.
- Season to taste and sprinkle with the cayenne pepper.
