Braised Pork with Capsicums

Braised Pork with Capsicums - This simple, but tasty, Asian-inspired dish uses seitan pork.  The medley of capsicums creates a feast for the eyes.

Ingredients
  • 2 tbsp Olive oil
  • 400 g seitan Pork (See NOTES)
  • 1 medium Onion - halved and then sliced crossways
  • 1 clove Garlic - minced
  • 1 cup vegetarian Chicken stock
  • 12 Capers
  • 2 tsp Soy Sauce
  • 0.5 a medium Red Capsicum (bell pepper)- diced
  • 0.5 a medium Green Capsicum (bell pepper) - diced
  • 0.5 a medium Yellow Capsicum (bell pepper) - diced
Instructions
  1. Slice the seitan into 1 cm-thick slices and fry or barbeque on a medium heat until well browned.
  2. Meanwhile, sauté the onion, on a medium-low heat, until very soft and brown.
  3. When cool enough to handle, cut the seitan into cubes and add it to the onions with the garlic, stock, capers and soy – simmer, covered, for 45 minutes.
  4. Add the capsicums and cook, uncovered, for 15 minutes, until the sauce has thickened.
  5. Serve on rice.
