Southern-Fried Tofu 
Craving some Southern-fried Chicken?  Well, this not quite the same, but IT IS crunchy and the taste is spot on.

  • Preheat the oven to 200°C (180°C fan-forced). Line a baking dish with oiled baking paper.
  • Mix together the bread crumbs, yeast and seasoning mix, in a shallow dish or a dinner plate.
  • Place the chickpea flour in a small bowl, add the water and vinegar and whisk to combine. Pour into a shallow dish or dinner plate.
  • Dip the tofu into the batter – coating all sides, then into the seasoned breadcrumb mixture.
  • Place the tofu pieces into the baking dish and bake for 20 minutes. Turn over and bake for further 10 minutes.
  • Meanwhile, combine the sauce ingredients in a small bowl.
  • Serve with potato chips (fries) and salad or green vegetables.

Notes

Poultry Seasoning
1 tsp dried thyme
½ tsp dried sage
¼ tsp dried rosemary
¼ tsp dried marjoram
⅛ tsp ground black pepper
¼ tsp table salt

Grind together in a pestle and mortar
