Green Bean Quiche –
I remember cooking quiche when living in college – the other students thought it very sophisticated and clever
– I didn’t let on how easy it is.

- Place the beans in a saucepan, cover with water, bring to the boil, reduce the heat and simmer, covered, for 5 minutes. Alternatively, microwave, on high, for 3 minutes.
- Sauté the onion, in the butter (oil), over a medium heat, until translucent.
- Add the mushrooms and capsicum (bell pepper) and continue to cook until the mushrooms are cooked.
- Meanwhile, combine the milk, sour cream and eggs in a large bowl.
- Add the beans and mushroom mixture and stir to combine.
- Grease a 20cm pie dish and line the base and sides with the pastry. Cover the base with baking paper and fill with uncooked rice or pastry weights.
- Bake for 10 minutes, remove the rice/weights and paper and bake for a further 10 minutes.
